Famous BEER-CHEESE DIP

1 lb. process cheese spread loaf, cut into pieces
1/2 cup regular or non-alcoholic beer (any brand)
1/2 to 1 teaspoon red pepper sauce
bite-sized vegetables, bread cubes, or pretzels (if desired)

Heat cheese and beer in a 3-quart saucepan over medium heat. Stir constantly, until the cheese is melted and the mixture is smooth. Stir in the red pepper sauce.

Serve with vegetables, bread, or pretzels and with cool brews on the side.

BEER SMOKED SALMON

3 lb. salmon
2 c. soy sauce
2 c. beer (substitute wine if smoking beef)
1/2 c. brown sugar (light)
1/4 c. salt

Cut salmon in strips.
Cover with sauce mixture and leave 12 to 16 hours in refrigerator.
Wash real good.
Spread on paper and let dry.
Takes 8 to 10 hours to smoke it in traditional smoker using hickory chips.
Otherwise - side/smoke grill with a cedar plank for 20 minutes over hot coals. (Pre-wet the cedar plank first and slowly let it burn under the salmon.  Baste the fish with sauce mixture)

GRAIN BELTED BEER CAN CHICKEN

1 4 lb or larger whole chicken
1 12 oz. can of beer, any brand
Blend to taste garlic salt, pepper, red pepper and dried basil
Fresh garlic

Spred spice mix over chicken.
Surround chicken in saran wrap & refrigerate for 45-min - 2 hours

Preheat your grill to 350°F to 425°F, and/or use the 'indirect method' with charcoal with an open middle center section that does not overheat.

Take wrap off chicken of course. Open Grain Belt beer, drop in garlic gloves and insert the full beer can into the chicken opening
Chicken will be standing upright with the can inserted into the business end.

Stand the chicken upright on grill so she's nice and steady and not tipsy.
Close the grill and cook the chicken for approximately 120 minutes.
